There was a time i had a smoke with a FOH and she (20yo, Mother of 2, etc…) said she was saving for tasting a burger from the menu, that everyday she would serve it and wanted to try. It would’ve been a day works in price. When i went back to the kitchen the first burger order i had i “mistakenly” made the wrong one, then sent it to her.

I was a dishie once(as many of us were) and the guys would come ask me what I wanted to eat and then 10 mins later, like magic, “I accidentally made this wrong, you want it?” And it was exactly what I wanted. Dude-man on the fryer would routinely bring back his equipment full of Sweet Potato fries, fried Cod, and onion rings at the end of the night like “I guess I made too many!” Fed me and my roommate for like a year. I will never forget all the kindness and love those guys showed me everyday. They really knew how to treat a dishie as an equal and I worked my ASS off to try and be worth that respect.

I had guy who worked in the kitchen of a shitty bar and grill that I waitressed at who would always make me an amazing burger when I would show up to work hungover. Mind you, this was like every day. It was a burger patty dipped in a teriyaki sauce that he would make, cooked to medium, grilled pineapple, pepper jack cheese, jalapeños, extra tomato and mayo. We didn’t even have a teriyaki sauce on the menu for anything, but he came up with one for my burger. This was one of the most solid people I’ve ever known. I was at a point in my life where almost the only food I got to eat, was the food he would make me at work. I hope he’s out there living his best life for helping someone when they were struggling.

Well done, Chef. You gotta take care of your dishies. They are an *indispensable* part of the kitchen team.

If they dislocate their jaw enough to bite it evenly they’re gonna get a promotion real soon. 👄

Whenever I’m at work, the dishie knows to ask me, whatever she wants she gets. A couple item we can’t eat for free but she the only one that gets anything. Gotta take care of the dishie!

I was a dishie for about a year at this middle tier neighborhood Italian joint. They had such fuckin good food man, and they sent me home with a meal every night. Fucking awesome gig too, paid me $20/hr, regular snacks on shift. They always had tiramisu and whenever they sent the big hotel pan back I’d scrape it and turn it into a plate or just get after it with my hands. Pretty quickly they caught on and started hanging onto the pan till I was clear so I’d have some time to enjoy it before I had to put the gloves back on. I used to watch anime back there on my phone while I was doing the dishes and they got me a stand for my phone lmao.
Something about the scraps from the pan were always sweeter than the slices they’d send me home with.

With those jalapenos, whole lettuce instead of shredded, and just the overall height of the burger, I bet that tastes fresh as fuck. There’s something about burgers that look like that that makes them taste super fresh. I make burgers at home sometimes, better than anything I’ve had in a restaurant, but they are still “heavy”. Your burger seems like it would be light and fresh in comparison. I personally would ditch the tomato, but that seems like it would add to the freshness. Good job taking care of the backbone of the restaurant.
